EXPERIMENTAL SERIES: BARREL AGED GIN
We distilled a strong juniper base, then added some of our favourite spices including star anise, nutmeg, cloves and some organic dried fruits like dates, apple and berries. To us, it tasted like plum pudding, but something was still missing… We contacted our friends at Timboon Distillery and borrowed a 70L American Oak Ex-Port barrel, which had recently been emptied of one of their whiskies. Our already delicious gin matured in that barrel for 4 months at 66% ABV. A perfect start to our experimental series, as a sipping gin for the connoisseurs.
